América Latina, el Caribe y el mundo enfrentan una crisis que incluye, entre otras, dos dimensiones fundamentales: el dramático deterioro ambiental y la profunda debacle alimentaria. Dicha crisis se caracteriza por el acaparamiento, concentración y extranjerización de las tierras de los campesinos, de los indígenas originarios y de los afrodescendientes solo comparable con la que se dio durante la Colonia.
El objetivo de esta guía es proponer una metodología para la “evaluación de la sostenibilidad de los sistemas de producción de la agricultura familiar”, a través de “indicadores de sostenibilidad”. Con ellos se busca detectar “puntos críticos” en los sistemas de producción que limitan su sostenibilidad, de forma tal que se pueda iniciar un proceso de elaboración de “estrategias de gestión sostenible” enfocado al fortalecimiento de la agricultura familiar y al desarrollo de los territorios rurales en los que se desenvuelven.

Bolivia y Perú son los principales países productores de este grano andino, cuyas características alimenticias son destacables, por ejemplo, se registran contenidos de proteína que van desde los 17 a 19%, se cuenta con una amplia variabilidad genética que le confiere al cultivo grandes posibilidades de usos culinarios e industriales.
